Jeg kan bare innrømme det først som sist: nå er jeg skikkelig hekta på nykål, eller sommerkål om du vil. Den er mild og spør og passer til så utrolig mye, synes jeg. I dag lagde jeg sesamnudler med nykål. Og det ble en skikkelig vellykket rett synes jeg. Nudlene var myke, men hadde fortsatt litt tyggemotstand. Kålen var sprø og nesten søt, mens sausen var salt, litt hot og litt nøtteaktig i smaken. Dessuten bidro ristede sesamfrøene til litt krønsj også.

I denne retten lar jeg kålen ligge med rikelig salt en stund først. Det gjør at en god del av vannet kan klemmes ut av kålen. Det igjen medfører at kålen blir litt mykere og at den trekker til seg smakene fra sausen bedre. Dette har faktisk blitt en favorittmetode å tilberede kålen på for tiden. Samme teknikk er brukt på kålen som er inne kyllinggyozaene også. Men mens poenget med å salte kålen på forhånd i kyllinggyozaene var å få ut vannet for at ikke gyozaeen skylle bli vassne, var altså poenget i denne retten å få kålen til å ta til seg mer smak. Kålen blir ikke veldig salt heller, for jeg skyller den godt får jeg klemmer ut vannet og bruker den.

Ingredienser

  • 1/2 hode nykål
  • 2 ss salt
  • 150 gr tørre udonnudler
  • salt til koking
  • 3 ss soyasaus
  • 1 ss riseddik
  • 1 ss sukker
  • 3 ts sesamolje
  • 3 vårløk
  • 3 ss sesamfrø
  • 1 ts chiliflakes (valgfritt)

Fremgangsmåte

  • Skjær kålen i tynne strimler og legg den i en bolle med de to ss salt. Bland godt og la det stå i 20-30 minutter.
  • Skyll kålen godt og klem ut så mye vann som mulig. Sett til side.
  • Kok nudlene som anvist på pakken.
  • Mens nudlene koker, bland soyasaus, riseddik, sukker, sesamolje og evt. chiliflakesene.
  • Rist sesamfrøene i en tørr stekepanne til de blir gylne. Sett til side.
  • Skjær vårløken i tynne ringer.
  • Så snart nudlene er ferdig kokte, hell av vannet og bland inn sausen, kålen, vårløken og sesamfrøene.

Server som lett middag eller lunsj alene, eller som tilbehør til kjøtt, kylling eller fisk. Vel bekomme.

Får du ikke tak i udonnudler, går det fint an å bruke, sobanudler, risnudler eller spagetti. Disse nudlene kan spises varme, romtempererte, eller kalde.
