Jeg begynner året med en oppskrift med fisk og masse grønnsaker. Det skulle vel passe godt for de fleste nå med mat som er alt annet enn julete og tradisjonell norsk. Hjemme hos oss er vi glade i thai-inspirert mat og denne retten er ikke noe unntak. Vi er imidlertid ikke alltid helt enige om hvor sterk maten skal være, men i denne oppskriften er den ca. middels sterk. Liker du mild mat, kan du redusere mengden chili paste og liker du ekstra sterk kan du tilsette mer, eller tilsette hakket chili.

Som med all mat fra Thailand, er det viktig å finne en balanse mellom de fem smakselementene, surt, salt, søtt, bittert og sterkt. Jeg synes ofte mat med kokosmelk og -fløte kan bli litt vammelt om det ikke balanseres med noe syrlig som i dette tilfellet er limesaft. Smaker du på sausen før du tilsetter limejuicen vil du kjenne at den er litt sterk, men ellers temmelig tam. Sukkeret og limesaften lokker frem et mye videre spekter av smaker og hever retten mange hakk. Hvor mye sukker og lime er opp til kokken, men retten skal verken være søt eller direkte syrlig. Ta gjerne litt etter hvert og smak deg frem til en balanse du liker. Det kan også være stor forskjell på hvor mye saft en lime faktisk inneholder, så kanskje trenger du to lime, eller bare en halv for å få den smaken du ønsker.

Ingredienser

  • 3 fedd hvitløk, finhakket
  • 2 ts revet ingefær
  • 1 løk skåret i tynne båter
  • 4 ss rapsolje
  • 2 toppede ts med rød curry paste
  • 1/2 fennikel i tynne skiver
  • 1 rød paprika i strimler
  • 1 gulrot i tynne staver
  • 1 pk sukkererter i biter
  • 1 pakke kokosfløte
  • 1/2 l hønsebuljong (vann + terning)
  • saften fra 1 lime
  • 1 ts sukker
  • 500 gr laksefilet uten skinn og ben i terninger

Fremgangsmåte

  • Skjær opp og gjør alle ingrediensene klare.
  • Varm halvparten av oljen i en gryte og fres hvitløk, ingefær og løk ved middels varme til løken er blitt bløt og falt sammen.
  • Tilsett red curry paste og la det frese et par minutter.
  • Tilsett hønsebuljong og kokosfløten. La det koke opp og rør så alt blander seg godt.
  • Ha oppi grønnsakene unntatt sukkerertene og la det koke i ca. 10 minutter.
  • Stek laksen i en stekepanne i resten av oljen. Ikke la den bli gjennomstekt, men la laksebitene få litt farge på alle sider.
  • Smak til curryen med limesaften og sukker.
  • Tilsett sukkererter og laksen og la det bare bli gjennomvarmt. Maks et par minutter.

Server straks med kokt ris og gjerne litt koriander drysset over. Vel bekomme.
