Pin

Fiskegrateng er en populær middagsrett både hos store og små. I hvert fall er den det hjemme hos oss. Vanligvis lager jeg den med kokt torsk og makaroni, men i dag ville jeg lage en variant. Jeg brukte lettsaltet torsk i stedet for fersk fisk og poteter i stedet for makaroni, altså ingrediensene til tradisjonell plukkfisk. Sammen med stivpiskede eggehviter ble det en svært luftig grateng som falt i smak hos alle rundt bordet.

Plukkfisk er en ypperlig måte å bruke opp fiske- og potetrester. Kok gjerne litt ekstra av begge deler så har du en lettvint og veldig populær middag neste dag. Dersom du ikke kan vente, eller har lyst til å hoppe over kokt torsk med poteter, så går det fint å koke det for anledningen også. Det er absolutt ikke nødvendig med mellomlagring i kjøleskapet. Men har du rester så vet du hva du kan lage, altså.

Ingredienser

  • 400 gr kokt lettsaltet torsk
  • 800 gr kokte poteter
  • 50 gr smør
  • 5 ss hvetemel
  • 5 dl melk
  • 4 egg - plommer og hviter hver for seg
  • 1/2 ts salt
  • rasp

Fremgangsmåte

  • Sett ovnen på 200 grader (over- og undervarme)
  • Del potetene i terninger (1x1 cm) og flak opp fisken.
  • Smelt smøret i en stor kjele. Ha oppi melet og rør til det er klumpefritt. Tilsett melken litt om gangen og rør godt mellom hver gang du sper, så det ikke blir klumper.
  • La sausen koke noen minutter. Ta sausen av varmen og rør inn eggeplommene en av gangen. Smak til med salt.
  • Stivpisk hvitene.
  • Rør inn potetterninger og fisk i sausen. Bland forsiktig de stivpiskede eggehvitene i sausen litt om gangen.
  • Smør en ildfast form. Hell gratengmassen i formen og strø over rasp.
  • Stek gratengen i ovnen i 35-40 minutter.

Server med en grønn salat. Vel bekomme.
