I dag hadde vi tre sultne jenter som skulle ha noe kjapp mat (å spise) før de skulle på trening. Jeg lagde pasta Norma. Og selv om Tuppen rynket litt på nesen før auberginen kom oppi gryten, spiste alle tre med god appetitt når maten først sto på bordet. Så det må jo være et godt skussmål for retten.

Pasta Norma er en italiensk klassiker fra Sicilia. Den er proppfull av deilige middelhavssmaker som tomat, aubergine, basilikum, hvitløk og salt ost. Retten greide å bringe litt solskinn inn i heimen til tross for at det var meget høstaktig ute med regn og bekmørke.

Skal retten lages helt autentisk skal det brukes en ost som heter Ricotta salata. Den har ikke så mye å gjøre med den ricotta’en vi får kjøpt her. Ricotta salata er en fast nokså salt ost. Jeg valgte derfor å bruke fetaost som substitutt, og det fungerte veldig bra. Auberginen er som en svamp som suger til seg all god smak i gryten og dessuten blir den silkemyk når den blir kokt lenge. Bruker du gode hermetiske tomater blir sausen fyldig og god. Som en flott kontrast er den salte osten som drysses på toppen. Til hverdags er jeg opptatt av å bruke fullkornspasta. Vanlig hvit pasta blir som å spise loff, og det synes jeg ikke hører hverdagene til. Heldigvis er det nå lett å få tak i fullkornspasta i mange varianter. Tradisjonelt skal det visst brukes penne til Norma, men her er det fritt frem for å bruke det man får tak i. Godt blir det uansett.

Ingredienser

  • 1 pakke penne 
  • 1 stor aubergine
  • 2 ss salt
  • 2 fedd hvitløk
  • 1 liten løk
  • 3 ss olivenolje
  • 2 bokser knuste tomater
  • 1 ts sukker
  • nykvernet pepper
  • 1 liten håndfull basilikumblader
  • 200 gr fetaost

Fremgangsmåte

  • Skjær auberginen i 1 cm tykke skiver. Dryss med saltet slik at begge sider av aubergineskivene får salt på seg. La det ligge i 30-60 minutter slik at væske og bitterstoffer blir trukket ut.
  • Skyll saltet av auberginen og klapp skivene tørre. Skjær i små terninger.
  • Finhakk hvitløk og løk og fres det blankt i en gryte.
  • Ha oppi auberginen og stek på middels varme i ca. 15 minutter til auberginen er helt myk.
  • Tilsett tomatene og smak til med sukker og pepper.
  • Mens tomatsausen småputerer, kok pastaen som anvist på pakken. Hold av litt av pastavannet til å spe tomatsausen med dersom den er litt tykk.
  • Rett før servering blandes strimlede basilikumblader inn.
  • Smuldre fetaosten og dryss den over ved servering.

Ha gjerne en grønn salat ved siden av. Vel bekomme
