Ikke et galt ord om torsken eller seifileten som ligger i fiskedisken, men i dag får isgalten være stjernen. Dette er en skikkelig fin hverdagsfisk som fortjener litt ekstra oppmerksomhet. Den er den litt unnselige fetteren eller fiskediskens veggpryd. Den ligger der i fiskedisken, men jeg tror det er mange som lar den bli liggende der fordi den er litt ukjent.  Og det er i grunnen litt synd, for den har en god, mild smak og er fast og fin i, ehh fisken, og i tillegg er den en av de rimeligste fiskene i disken. Den kan dermed brukes til så mangt. I dag har jeg laget ovnsbakt isgalt med byggotto og bakte cherrytomater. Sammen med byggottoen og de ovnsbakte tomatene blir det litt luksuriøs hverdagsmiddag som absolutt ikke velter budsjettet.

Byggotto er den norske varianten av den italienske risottoen. Den er lett å lage, og jeg synes den passer utmerket til fisk. Som italienerne dropper jeg parmesan i byggottoen når den serveres til fisk. Dersom du liker parmesan, er det ikke noe i veien for å tilsette litt rett før servering.

Ingredienser

  • 600 gr isgaltfilet
  • 2 dl byggryn
  • 1 liten rødløk
  • 200 gr svartkål
  • 1 dl hvitvin (eplejuice)
  • 1/2 terning grønnsaksbuljong
  • 4 dl varmt vann
  • 50 gr smør
  • 300 gr cherrytomater
  • olivenolje
  • salt og pepper

Fremgangsmåte

  • Sett ovnen på 180 grader.
  • Finhakk løken og varm litt olivenolje i en gryte.
  • Fres løken til den er myk og litt transparent. Den skal ikke ta farge.
  • Tilsett byggrynene og fres et par minutter til.
  • Tilsett vinen / eplejucien og la det koke nesten helt inn.
  • Skru varmen ned til middels lav temperatur. Det skal bare småkoke fra nå av.
  • Hakk buljongterningen grovt og tilsett den og litt av det varme vannet. La det koke nesten inn under omrøring mellom hver gang du tilsetter litt mer vann. Fortsett til byggrynene er blitt møre. Det tar ca. 20-25 minutter.
  • Del fisken i porsjonsstykker og legg den på et stekebrett sammen med tomatene. Drypp over olivenolje og krydre godt med salt og pepper.
  • Bak i ovnen til fisken er ferdig og tomatene har blitt myke (ca. 10-12 minutter). Dersom fiskefiletene er tynne, kan tomatene bakes i 5 minutter før fisken legges inn.
  • Rett før servering blandes finstrimlet svartkål ned i byggottoen og smøret røres inn. Smak til med mer salt om nødvendig.

Server straks rykende varm. Vel bekomme.
