I går brygget Husbond og Lillebror øl til jul. Så i løpet av noen uker nå vil vi ha deilig øl til julebord, julemiddag og flere festligheter utover i desember. Til ølbrygging går det store mengder korn. Etter at maltet er ferdig mesket og skylt, sto Husbond igjen med utrolig mye mesk. Dette kastes som regel rett i søpla, men ikke denne gangen. Jeg hadde nemlig bestemt meg for å forsøke å bake med mesken. Jeg ropte ned i kjelleren at jeg trengte mesk og han spurte tilbake hvor mye jeg trengte. «Fem desiliter» svarte jeg, og da hørte jeg en rå latter nede fra kjelleren, for der var det mellom 10 og 15 kilo av slagsen. Så det lett er det ikke å bruke opp mesken med mindre man starter industriell produksjon. Men en artig sak er det jo og knekkebrødet ble riktig så godt de. Dessuten har jeg nå frosset ned mesk nok til fem omganger til med knekkebrød.

Knekkebrødene ble knallgode. Det eneste som kunne gjort knekkebrødene enda bedre var litt mer salt. Jeg har derfor lagt til at det kan drysses litt flaksalt over brødene før de stekes. Det skal i hvert fall jeg gjøre neste gang. Knekkebrødene passer supert til litt smakssterk mat som røkt eller gravet fisk eller kjøtt og sterk ost. Ved siden av julematen vil disse knekkebrødene være helt topp.

Ingredienser

  • 5 dl mesk
  • 2 dl grovt sammalt rugmel
  • 1 dl solsikkefrø
  • 1 dl linfrø
  • 1 dl sesamfrø
  • 1 ts salt
  • 5 dl kaldt vann
  • flaksalt til å strø på toppen

Fremgangsmåte

  • Rør sammen de tørre ingrediensene og hell oppi vannet.
  • Bland godt og fordel deigen på to bakebrett med bakepapir.
  • Smør det tynt utover med en slikkepott. Hele platene skal dekkes. Det ser veldig tynt ut, men det blir best da.
  • Sett oven på 160 grader varmluft. Dryss over litt flaksalt. Du kan godt steke begge brettene samtidig, bare bytt plass halvveis i prosessen.
  • Stek knekkebrødene i 10 minutter.
  • Ta brettene ut og skjær knekkebrødet i passelige stykker (ca. 5 x 5 cm) bruk pizzahjul eller kniv.
  • Sett brettene tilbake og stek i ytterlige 30 minutter. Bytt posisjon på brettene etter 15 minutter. Etter 30 minutter tas brettene ut igjen og de skjæres helt fra hverandre og løsnes fra bakepapiret.
  • Senk temperaturen til 150 grader og sett brettene inn igjen i ca. 20 minutter, eller til de er helt tørre.

Prøvde oppskriften med forrige batch, og de knekkebrøda ble noen riktig slagere! Nå skal jeg bake på nytt så jeg har til jula

Så hyggelig å høre. Gøy å bruke opp det som egentlig bare går i søppeldunken :). Så da blir det både hjemmelaget øl og knekkebrød til jul. Høres herlig ut.

Elsker disse knekkebrødene! Selv folk som «aldri» spiser knekkebrød maser om at jeg lager. Har brukt denne oppskriften år etter år.
Mye av mesken tørker jeg på varmluft, deretter porsjonerer jeg oppskriften i flere små «ferdigposer». Alltid klar til baking! Godt med en dæsj gresskarkjerner oppi også.
