Hvis du er like glad i suppe og asiatiske smaker som jeg, er jeg sikker på at du vil like denne suppen like godt som jeg gjorde. Den er nemlig proppfull av gode ting. Miso og soya gir suppen en herlig, kraftig umamismak og sammen med hvitløk og chili blir det en umiskjennelig asiatisk suppe. Ny sommerkål og gulrøtter sørger for at det er noe sprøtt og friskt i suppen, nudlene gir god metthetsfølelse og rekene er prikken over i’en. At den er kjapp å lage og at alt foregår i en gryte trekker jo heller ikke akkurat ned i min bok.

Miso er en japansk smakstilsetning som lages av korn, ris eller soyabønner. Miso fås kjøpt i asiatiske butikker, enkelte helsekostbutikker, velassorterte dagligvarebutikker og selvfølgelig på nettet. Miso er ganske salt, så hold gjerne litt igjen på andre salte ting. Får du tak i kyllingbuljong med lavt saltinnhold er det bra. Alternativt kan du bruke kyllingfond på flaske denne inneholder lite salt.

Ingredienser

  • 2 fedd hvitløk, finhakket
  • 1 ss revet ingefær
  • 2 vårløk (det hvite finhakket)
  • 2 ss nøytral olje
  • 1 l kyllingbuljong2 ss miso
  • 1 ss soyasaus
  • 1 ss shriracha
  • 1/4 nykål, finstrimlet
  • 1 gulrot i tynne skiver
  • 100 gr tynne sobanudler (vekt før koking)
  • 2 vårløk (det grønne) i ringer
  • 1/2 kg reker

Fremgangsmåte

  • Pill rekene og sett til side i kjøleskapet.
  • Varm oljen i en gryte og fres hvitløk, ingefær og vårløk et par minutter på middels varme.
  • Tilsett kyllingbuljong, miso, soyasaus og schriracha. Kok opp og smak til.
  • Tilsett sobanudlene, kålen og gulrotskivene. La det koke i 3 minutter.
  • Senk varmen og ha oppi rekene og vårløken.
  • La det trekke ett minutt eller to til rekene har blitt varme.

Server straks i dype boller.
