Oppskriften på lettvint baccalao fant jeg en gang for lenge siden på baksiden av en pakke lettsaltet torsk fra Findus. Som alltid når jeg har laget noe flere ganger, så blir veien litt til mens jeg koker. Oppskriften er derfor ikke helt lik den som var utgangspunktet.

Ved å bruke lettsaltet torsk i stedet for tørrfisk, går det veldig kjapt å lage denne retten. Den får nok ikke helt samme smak om skikkelig baccalao, men på en hverdag holder dette i massevis for meg. Dette er nemlig skikkelig snadder. Den salte torsken passer usedvanlig godt sammen med de syrlige tomatene og potetene sørger for at det blir et mettende måltid. En annen fordel er selvsagt at når alt er skåret opp og lagt i gryten, så passer den seg selv.

Er du redd for at det skal brenne seg i bunnen av gryten, kan du sette inn i ovnen i stedet etter at du har fått den til å koke på plantetoppen. Sett da ovnen på 150 grader og la gryten stå der i 45 minutter. Sjekk om potetene er møre, hvis ikke la den stå litt lengre.

Ingredienser

  • 1  1/2 pose frossen lettsaltet torsk
  • 1 stor løk
  • 8 middels store poteter
  • 1 boks tomater
  • 1 dl olivenolje
  • ½ glass tomatpuré
  • frisk chili eller chilipulver etter smak
  • pepper

Fremgangsmåte

  • Skrell potetene og skjær dem i ½ cm tykke skiver.
  • Rens løken og skjær den også i skiver. Kok poteter og løk i 5 minutter og hell av vannet.
  • Imens, rens fisken for skinn og skjær den i mindre biter.
  • Bland tomater, tomatpuré, olje og krydder i et litermål.
  • Til sammen skal det bli ca. 6 dl væske.
  • Ha litt olje i bunnen av en gryte. Legg de halvkokte potetene og løken lagvis med fisken, og hell over olje-/tomatblandingen og sett gryten på middels varme og la den småkoke til potetene er gjennomkokt.
  • Rist litt på gryten av og til slik at det ikke brenner seg fast i bunnen.

Server med en grønn salat eller kokte grønne grønnsaker som for eksempel  brokkoli, aspargesbønner eller erter.
