Det er mange fordeler med laks til middag. Det er både sunt, godt, lett å variere og likt av de fleste. Allikevel er det nok sånn at laksemiddagen blir den samme gang etter gang. Nedenfor har jeg samlet mine 5 beste hverdagsmiddager med laks. Så neste gang du skal ha laks til middag, kan du jo prøve en av disse i stedet for din vanlige variant.

Dette er en lettvint og veldig sunn middag som sikkert mange allerede kjenner godt. Har du ikke spist dette før, anbafalere jeg deg det på det sterkeste. Masse grønnsaker i forskjellige farger og deilig marinert laks er egnet til å gjøre både mage, gane og øye glad.

Paien er nydelig og kan spises både varm og kald. Den egner seg like godt til venninneklubben som til middag på en tirsdag.

Nudelsalat med laks

Denne salaten er insprert av thaismaker., så dersom du liker mat med masse smak er dette et skikkelig digg alternativ.  Laksen stekes under grillen i ovnen og blir skikkelig saftig og sammen med sprø grønnsaker, myke risnudler og en dressing som sparker i alle retninger blir dette knallgodt.

Honning og misoglassert laks med pestocouscous

Dette er middagen du kan gå for når det skal gå fort. Couscous er laget på et blunk, og har du pesto på glass er det like kjapt å pimpe den opp. Rikelig med spinat gjør at næringsinnholdet er på topp og mens du ordner med couscous’en passer laksen seg selv i ovnen.

Jeg kan rett og slett ikke lage denne oversikten uten å ta med denne spagettioppskriften. Denne har vært med meg i veldig mange år, og vi blir aldri lei den. Laks passer veldig godt sammen med pasta, og den røkt varianten gjør hele retten litt lukseriøs.
