Aspargessesongen er vel litt på hell nå, men jeg drister meg til nok en aspargesoppskrift sånn helt på tampen. Og det er ikke helt uten grunn at jeg slenger denne inn, for den er rett og slett kjempegod. Samtidig kanskje en litt annen måte å servere asparges på. Gratinerte asparges med skinke er en tradisjonell rett fra Tyskland der de virkelig vet å sette pris på disse hvite aspargesene som nesten bare er å få tak i i sesongen.

Aspargesene blir kokt nesten helt møre før de blir svøpt inn i røkt skinke og så gratinert i ovnen med en deilig hvit saus og ost på toppen. Et lite triks gjør at sausen blir ekstra god. Når aspargesen kokes has nemlig skrell og avskjær fra aspargesen med i kokevannet. Det gir kokevannet ekstra aspargessmak, og det er dette kokevannet som er basis for den hvite gratineringssausen.

Gratinerte asparges med skinke er en rett som står svært godt på egne ben. Den egner seg derfor godt som en lunsjrett bare med litt frisk salat ved siden av og evt. litt godt brød, eller som et deilig kveldsmåltid . Et glass avkjølt riesling er nok det tradisjonelle valget av drikke til disse aspargesene.

Asparges er i mine øyne kongen av grønnsakene og derfor spiser jeg store mengder når den er i sesong. Av den grunn finner du også mange oppskrifter med asparges på bloggen her. Ingredienser

  • 1 bunt hvite asparges (8-10 stk)
  • 2 ss smør
  • 2 ss hvetemel
  • sitronsaft, noen dråper
  • 2 ss fløte
  • Salt og pepper
  • 4 store skiver røkt skinke
  • 2 dl revet Jarlsbergost

Fremgangsmåte

  • Forvarm ovnen til 175 grader.
  • Skjær av den nederste delen av aspargesene og skrell dem. Ta vare på skrell og avskjær.
  • Kok opp vann i en vid gryte og tilsett skrell og avskjær. Salt vannet lett.
  • Kok aspargesene til de er nesten helt møre. 10-12 minutter, avhengig av tykkelsen på aspargesene.
  • Ta aspargesene ut av kokevannet. Sil vannet og ta vare på det.
  • Del aspargesene i 4 bunter og rull skinken rundt og legg i et ovnsfast fat med skjøten ned.
  • Smelt smøret i en gryte og tilsett melet. Spe med ca. 3 dl av aspargesvannet, litt etter litt.
  • La det koke i 5 minutter og tilsett fløten helt mot slutten av koketiden.
  • Smak sausen til med salt, pepper og sitronsaft.
  • Hell sausen over aspargesbuntene og dryss på osten.
  • Sett aspargesene inn i ovnen og stek til osten har smeltet, blitt gyllen og sausen bobler. Ca. 20-25 minutter.

Server med grønn salat og godt brød ved siden av. Et glass kjølig riesling ved siden av er heller ikke feil.
