Endelig begynner de norske vintereplene å bli modene. Har du ikke selv et epletre er de nå å få kjøpt i butikken, eller kanskje du har en nabo eller kollega som har litt for mange epler. Vi har et tre i hagen, men det er av en type som blir veldig sent modent, så våre epler er ikke klare ennå. I dag er det imidlertid den store norske epledagen, så da kommer det en oppskrift på eplemuffins med karamellsmak her, selv om eplene ikke er fra min egen hage.

Disse ble skikkelig søte og saftige, men en litt syrlig smak fra eplene som kontrast. De smaker med andre ord godt dersom du er skikkelig fysen på noe søtt en kveld.

Ingredienser

  • 50 gr smør
  • 1 dl hvitt sukker
  • 3 ss brunt sukker
  • 400 gr epler i små terninger
  • 1 ss sitronsaft
  • 360 gr hvetemel
  • 200 gr hvitt sukker
  • 100 gr brunt sukker
  • 1 1/2 ts bakepulver
  • 3,75 dl melk
  • 1 egg

Fremgangsmåte

  • Sett ovnen på 170 grader.
  • Smelt smøret sammen med sukkeret og la det småputre et par minutter. Tilsett epleterningene og sitronsaften og la alt småkoke til alt sukkeret har løst seg opp. Sett til side og la det avkjøle seg.
  • Bland de tørre ingrediensene i en bolle.
  • Pisk egget ut i melken. Start en mixmaster på lav hastighet og hell melke- eggeblandingen i det tørre. Fortsett å piske til røren har blitt helt jevn.
  • Hell i den avkjølte eple/karamellblandingen og rør godt.
  • Hell over i muffinsformer.
  • Stek i ca. 20-25 minutter. Stikk en bakepinne i en av muffinsene for å sjekke om de er ferdige. Det er de når det ikke henger noe kakedeig igjen på bakepinnen.

Tips

Server gjerne med melis på toppen (hvis ikke noen i familien har spist opp all melisen uten å si i fra da...).
