Creme brulee er en populær dessert som de fleste liker. Den er heller ikke særlig vanskelig å lage. Det eneste som noen kanskje synes er litt ugreit, er vannbadet puddingene skal stekes i. Det å skulle balansere en langpanne med mange former i kokende vann kan jo forståelig nok virke litt skremmende. Men lager du creme brulee i dampovn, slipper du unna hele vannbadstyret. Det er faktisk en veldig grei måte å lage denne desserten på. Du setter bare formene inn i dampovnen, fyller på vann og setter på ovnen. Tiden det tar å steke og oppskriften er den samme som for creme brulee laget i vanlig ovn.

Creme brulee er en ypperlig dessert å lage når man har middagsselskap, for den kan i stor grad lages klar på forhånd. I hvert fall kan puddingene lages god tid i forveien, og så er det bare å gratinere før servering. Eventuelle frukter og bær som skal brukes til å pynte med, kan også gjøres klare i forveien.

Denne gangen har jeg servert creme bruleen med appelsinfileter, bringebær og granateple. Det er en søt og frisk kombinasjon som passer godt til den mektige puddingen. Men andre bær,eller frukter kan selvsagt også brukes. Bruk det du liker og får tak i.

Ingredienser

  • 2 dl kremfløte
  • 2 dl melk
  • 1 vaniljestang
  • 75 gr sukker
  • 4 eggeplommer
  • brunt sukker til gratinering

Fremgangsmåte

  • Del vaniljestangen i to og skrap ut frøene.
  • Ha fløte, melk, sukker, vaniljefrø og -stang og kok opp.
  • Ta fløteblandingen av varmen og la den avkjøle seg.
  • Pisk eggeplommene lett sammen.
  • Tilsett den avkjølte fløteblandingen i eggene i en tynn stråle mens du visper kraftig.
  • Sil blandingen og hell den over i 6 porsjonsformer.
  • Sett dampovnen på 100 grader og 100% damp.
  • Stek i 15 minutter. Puddingen skal fortsatt være dissete når du tar den ut.
  • Sett til side for avkjøling. Nå kan de evt. settes i kjøleskap dersom det er lenge til de skal spises.
  • Ta ut av kjøleskap ca. 30 min før servering for temperering.
  • Rett før servering drysses formene med brunt sukker og toppene gratineres enten under grillen i ovnen, eller med en liten håndholdt brenner.

Server med frisk frukt og bær. Vel bekomme.
