Inspirasjon til en oppskrift kan komme fra så mange steder. Denne gangen var det et resultat av «barsnakk». På en fest på for en liten stund siden var vi et par stykker som satt og snakket om gode salater, og hvor mye mer enn bare salatblader man kan bruke. Farro (spelt) og grønnkål var et par av ingrediensene som ble nevnt. I denne salaten er det ingen av delene. Jeg hadde riktignok planlagt å bruke spelt, men fikk ikke tak i det i nærbutikken min. Dermed ble det byggryn, som er et supert alternativ. Har du ingen av delene går det nok fint med bulgur også. Min byggrynsalat med lam og urter er en god og mettende lunsj, eller middagssalat.

Jeg har latt meg inspirere av Midtøstens smaker og blander urter, søtsyrlig granateple, matkorn og sitrus. Etter helgens lammestek var det litt rester og de passet ypperlig til dette følget. Har du ikke lammekjøtt, går det fint å servere denne salaten uten kjøtt også.

Det å bruke korn i salaten er kanskje ikke så vanlig her hjemme, men i landene rundt Middelhavet er det helt alminnelig. Et annet eksempel på det er Tabouleh. I Italia er farrosalat veldig populært, og noe svært mange delikatessebutikker selger tilsynelatende like mye av som pesto, marinert paprika og andre vanlige delikatesser. Fordelene med å bruke korn i salaten er mange. For det første metter det godt, og det er jo ubetinget en fordel når det skal være en matsalat. Korn er billig mat og dessuten inneholder det mye som er godt for oss. Når jeg koker gryn, koker jeg en litt stor porsjon. Resten kan jeg fryse ned, eller oppbevare i kjøleskapet til en annen dag. Grynene er også fine å ha i supper, wok eller gryteretter.

Ingredienser

  • 2 dl byggryn eller perlespelt
  • 1 terning kyllingbuljong
  • 100 gr spinat
  • 1/2 granateple
  • 1 neve mynteblader
  • 1 neve bredbladet persille
  • 1/2 fenikkel
  • 1/2 rødløk
  • 200 gr lammestek
  • 2 ss appelsinjuice
  • 4 ss olivenolje
  • 2 ts rødvinseddik
  • salt og pepper

Fremgangsmåte

  • Kok byggrynene eller spelten i hønsebuljong i ca. 15 minutter, eller til de er møre, men fortsatt har litt tyggemotstand.
  • Ta kjernene ut av granateplet.
  • Grovhakk persille og mynte og skjær rødløk og fenikkel i tynne skiver.
  • Skjær lammesteken i tynne skiver.
  • Pisk sammen appelsinjuice, rødeddik og olivenolje og smak til med salt og pepper.
  • Rens spinaten og forvell den i 30 sekunder. Den skal bare falle litt sammen.
  • Bland sammen alle ingrediensene i en bolle og hell over dressingen.

Serveres lun, eller kald gjerne med godt brød og tzatziki ved siden av. Vel bekomme
