Jeg er ikke så veldig glad i søtt pålegg, men appelsinmarmelade er et hederlig unntak. Jeg tror det er den lett bitre smaken skallet gir sammen med den friske sitrussmaken som gjør det for meg. Appelsinmarmelade er faktisk veldig lett å lage. Del i mindre biter, bland med sukker, la det koke og du er mer eller mindre i mål. Jeg har gitt denne marmeladen et litt julete preg ved å tilsette kardemomme og vanilje. Ikke mye, men en liten antydning av noe jul.

Appelsinmarmeladen er selvsagt fint å spise på brødskiven, men det er også veldig godt til ost, eller prøv den på pepperkaker sammen med en søt mascarponekrem. Det er godt det.

Visste du at det er steinene som gjør at marmeladen tykner? Det er det altså, for steinene inneholder nemlig pektin og det er her hemmeligheten ligger. Og det med steiner skapte et problem for meg da jeg skulle lage denne marmeladen, for jeg fikk ikke tak i noen appelsiner med steiner. Derfor måtte jeg bruke litt syltepulver i min marmelade for at den skulle få den riktige konsistensen. Det går altså helt fint, men har du appelsinsteiner trenger du ikke syltepulver.

Ingredienser

  • 500 gr appelsin (3 økologiske appelsiner)
  • 250 gr sukker
  • 1/2 vaniljestang
  • 1/2 dl vann
  • 8 kardemommekapsler

Fremgangsmåte

  • Skrubb den ene appelsinen godt. Skjær skallet av den og skjær det i små terninger. Del fruktkjøttet i mindre biter.
  • Skrell de to andre appelsinene og del i mindre biter. Plukk ut alle steinene, men ta vare på dem.
  • Pakk steinene inn i en liten gasbit, et tefileter, eller et sånn liten beholder til å ha krydder i.
  • Ha appeslinkjøtt, skall og steiner, sukker, krydder og vann i en tykkbunnet kjele og kok opp.
  • La det koke under lokk i 45 min på middels lav varme. Ta av lokket og la det koke i 15 min uten lokk.
  • Smak til og tilsett evt mer sukker dersom du synes marmeladen trenger det. Plukk ut kardemommekapsler og steiner.
  • Hell straks over på steriliserte glass.

Vel bekomme.

Tips

Dersom det ikke er steiner i appelsinen, kan du tilsette 1/2 pose syltepulver helt mot slutten av koketiden.
