Jeg kom over noen flotte små, lubne chilier her om dagen, og kunne ikke motstå fristelsen til å kjøpe en hel haug. De viste seg å være ganske mye hottere enn jeg trodde, så jeg innså at å spise opp alle mens de var ferske ville være en formidabel oppgave. Jeg bestemte meg derfor for å sylte dem. På den måten får vi et supert tilbehør  i hele høst. Chiliene er både syrlige og hotte og er supre å bruke på taco, nachos, burgere eller hva nå fantasien dikterer.

Hygiene er superviktig når man skal sylte. Derfor må glassene chiliene skal oppbevares på steriliseres. Det kan gjøres ved å først vaske dem skikkelig og deretter koke dem, eller la glassene få et opphold i ovnen. Jeg har dampovn og bruker å dampe glassene når jeg skal bruke dem. Uansett metode er dette ikke et trinn som kan hoppes over. Bakterier som kan kose seg og formere seg i stor stil er ikke noe særlig.

Ingredienser

  • 500 gr chili
  • 2 dl klar eddik 7%
  • 4 dl vann
  • 1 ss sukker
  • 1 ss salt
  • 1 ts gule sennepsfrø
  • 2 fedd hvitløk
  • 1 ts hele pepperkorn

Fremgangsmåte

  • Begynn med å sterilisere glassene.
  • Skyll chiliene godt, og skjær dem opp i ringer på ca. 4-5 mm.
  • Bland alle de andre ingrediensene i en gryte og kok opp. Vent til sukker og salt er helt løst opp.
  • Tilsett da chilien. Trekk gryten til side og la chilien trekke i laken i 10 min.
  • Ta chiliskivene opp med en hullsleiv og legg dem i de steriliserte glassene.
  • Hell over kokelake til det dekker helt.
  • Sett på lokk og la alt kjøle seg helt ned.
  • Oppbevar kjørlig og mørkt.
