Nå har vi vært så heldige å ha noen varme dager.  Hva er vel bedre da enn en enkel og mettende salat. Salat av brun ris metter godt og er en flott lunsjrett. Den er også fin å servere ved siden av grillet kjøtt eller fisk. Brun ris er hvit ris med skall på. Derfor er den litt sunnere, enn den hvite varianten. Den inneholder litt mer fiber og vitaminer/mineraler.

I denne salaten er det i tillegg til risen avokado, vårløk, paprika og masse urter. Det gir en skikkelig boost av smak og næring og tilfredsstiller mitt behov for grønn mat om nå på denne årstiden.

Når risen først er kokt er det raskt å slenge sammen resten av ingrediensene. Visste du forresten at det fint går an å fryse kokt ris? Derfor kan du koke mer enn du trenger i første omgang og ha risen på lur i fryseren til en annen dag du trenger en kjapp salat.

Ingredienser

  • 3 dl ukokt brun ris
  • 1 stor, eller 2 små avokadoer
  • 2 vårløk
  • 1 grønn paprika
  • 2 ss finhakket persille
  • 1 ts finhakket mynte
  • 3 ss olivenolje
  • 1 ss sitronsaft
  • salt og pepper
  • 1 fedd hvitløk, finhakket

Fremgangsmåte

  • Kok risen som anvist på pakken.
  • Når risen er ferdig kokt, legg den utover en stor tallerken for å avkjøles litt.
  • Skjær grønnsakene i små biter.
  • Pisk sammen olje, sitron, salt, pepper og finhakket hvitløk til en vinaigrette.
  • Bland de finhakkede urtene inn i salaten først, og deretter resten av grønnsakene.
  • Hell over dressingen og bland godt.

Server gjerne med godt brød ved siden av.

Spennende! Var på let etter litt forskjellige friske grillsalater! Denne er både mettende med risen og sunn med grønnsakene (og forsåvidt også fullkorn). Må prøves!
