Pin

Pavlova har de siste årene seilt opp som den store festdesserten og en sikker vinner på kakebordet. Og nå før 17. mai flommer internett over av oppskrifter på pavlova med forskjellige kremer og pynt. I dette perspektivet trengs det kanskje ikke nok en oppskrift, men jeg slenger meg på allikevel. Min variant har en krem av mascarpone og hvit sjokolade. Til den synes jeg det passer veldig godt med friske bringebær.

Ingredienser

  • 3 eggehviter
  • 1 klype salt
  • 1,7 dl sukker
  • 1/2 ts hvitvinseddik
  • 1 boks mascarpone
  • 3 dl fløte
  • 1 ss sukker
  • 100 gr hvit sjokolade
  • bringebær
  • mynte

Fremgangsmåte

  • Pisk eggehvitene stive. Tilsett eddiken og pisk litt mer. Tilsett sukkeret litt etter litt. Fortsett å piske til alt sukkeret er innarbeidet i marengsmassen. Den skal være helt stiv og skinnende blank.
  • Sett ovnen på 120 grader varmluft.
  • Fordel marengsmassen i seks rundinger på et bakebrett. Jeg  tegner seks sirkler (12 cm i diameter) på bakepapiret med penn, snur papiret og følger formen. Da blir de like store.
  • Bruk gjerne et kremmerhus og sprøyt ut marengsmassen og deretter en smørkniv eller lignende for å glatte ut.
  • Stek midt i ovnen i ca. 45 minutter. Slå av varmen og la marengsene stå der til de har blitt kalde.
  • Smelt sjokoladen over vannbad.
  • Pisk sammen fløte og mascarpone til en myk krem.
  • Bland litt av kremen i den smeltede sjokoladen og rør til sjokoladen er fingrevarm.
  • Tilsett sjokoladen i kremen og bland godt.
  • Så langt kan desserten forberedes. Rett før servering fordeles kremen på marengsene og pynt så med bær og mynteblader.
