Nå er det straks nyttårsaften og tid for årets aller siste fest. Til fest hører det også med god mat, og nedenfor har jeg satt sammen to forskjellige nyttårsmenyer, en med kjøtt til hovedrett og en med fisk. Mye av nøkkelen til en vellykket fest ligger mye i planlegging og at en god del av matlagingen kan gjøres klar eller forberedes på forhånd. Nedenfor får du også forslag til hva du kan gjøre klart på forhånd.

Den første menyen består av gratinerte kamskjell til forrett. Denne retten kan delvis lages på forhånd. Løk, hvitløk kan hakkes og stekes og kokes inn sammen med vinen. Osten kan rives og kamskjellene skjæres i skiver på forhånd. Da gjenstår det bare å sette sammen retten og gratinere før den serveres. Elgefileten som serveres til hovedrett skal tilberedes sous vide. Dette gir et perfekt resultat, med liten arbeidsinnsats og få bekymringer. Til dessert er det hvit sjokolademousse. Den smelter i munnen og sammen med litt frisk frukt eller bær som granateple, jordbær eller appelsin, er det en flott avslutning på måltidet.

Den andre menyen innledes med en herlig jordskokksuppe, Denne kan godt lages noen timer i forveien, og bare varmes forsiktig opp rett før servering. For mange er det en selvfølge med fisk på nyttårsaften og da passer det særlig godt med kveite synes jeg, for det er en skikkelig festfisk. Bak fiske i ovnen og server den med en klassisk smørsaus og du kan ikke gå feil.  Beurre blanc er ikke særlig vanskelig å lage, men den må lages rett før den skal serveres. Du kan selvsagt prøve termostrikset. Jeg har ikke forsøkt selv, så jeg står ikke inne for resultatet, men det kan jo være verdt å prøve. Alternativt går det an å prøve en liten porsjon på forhånd. Til dessert foreslår jeg bringebærfromasj servert i sjokoladeskall. Dette er en dessert som både ser og smaker nydelig. Dessuten kan den godt lages dagen i forveien.  Det er riktignok litt plundrete å lage sjokoladeskallene, men det går også an å kjøpe ferdige skall som da bare fylles med fromasjen.

Jeg har ikke noen vinforslag, men anbefaler deg å ta en tur på nærmeste pol og be om hjelp med vin til den menyen du har planlagt. På Polet arbeider det en masse dyktige mennesker som synes det er gøy å finne vin som passer til den maten du har tenkt å servere.
