Jeg har inntrykk av at ganske mange av de som har dampovn, ikke bruker den til så mye. Men i tillegg til å dampe fisk og grønnsaker, er dampovnen helt perfekt til alle retter som skal stekes i vannbad. Leverpostei er en slik rett som krever å stekes i vannbad, så når Husbond og jeg skulle lage dette var det helt naturlig at i stekte vår leverpostei i dampovn. Det ga et veldig bra resultat, og kan dermed anbefales varmt.

For meg hører leverpostei julen til, og siden jeg har bodd en del år i Danmark, er dansk leverpostei ekstra stas. Mens jeg bodde der, var det fast takst før hver jul, å gå innom en ekstra flink slakter å kjøpe med meg leverpostei hjem. Da fikk jeg dem vakumpakket og så fikk de hedersplassen på fanget hele veien hjem.

Denne oppskriften kommer ikke fra en slakter, men fra en av mine studiekameraters mor som er dansk. Etter hva jeg har forstått lager hun denne hvert år, og den er dermed et viktig innslag på familiens julekoldtbord. Fra nå av kommer det nok til å være det hos oss også.

Vi reduserte oppskriften noe i størrelse i forhold til den opprinnelige. Det skyldes rett og slett at vi hadde litt mindre lever og spekk enn den opprinnelige oppskriften krevde. I Karens oppskrift skal det også være 1 boks benfrie sild. Dette har vi erstattet med ansjosfiletet. Ellers er oppskriften helt lik.

Det er slett ikke vanskelig eller særlig tidkrevende å lage leverpostei i dampovn. Det tar litt tid å rense leveren, men ellers var det meget enkelt og greit. Og du verden så godt det ble. Den ene leverposteien greide Husbond og jeg å få spist med en gang den hadde kjølt seg litt ned, men fortsatt var nystekt og varm.

Har du ikke dampovn, går det helt fint å bruke vanlig ovn. Sett da leverposteien i en langpanne og hell på kokende vann slik at det dekker 2-3 cm oppover formen. Temperaturen i ovnen skal være den samme.

Ingredienser

  • 700 gr lever
  • 350 gr spekk
  • 40 gr hvetemel
  • 40 gr smør
  • 3,5 dl melk
  • 3 egg
  • 1,5 ts salt
  • 0,7 ts malt pepper
  • 0,7 ts malt allehånde
  • 1 stor løk
  • 4 ansjosfileter
  • 1 ss lake fra ansjosglasset

Fremgangsmåte

Oppskriften gir 4 4,5 dl former.

  • Smelt smør og rør inn melet og spe med melken til en tykk hvit saus. Kok noen minutter.
  • Avkjøl sausen litt
  • I mens, rens leveren for hinner
  • Skjær lever og spekk i mindre biter. Bruk en kjøkkenmaskin med kniver, og kjør spekket først og tilsett deretter lever, løk og ansjos og kjør massen så grov/fin du vil ha den.
  • Rør ett og ett egg inn i den hvite sausen. Tilsett krydderet og bland inn leverblandingen.
  • Hell røren i fire former og sett inn i ovnen på 170 grader / 80% damp.
  • Om ønskelig kan formene pyntes med en skive bacon og et laurbærblad.
  • Stek i ca. 35-40 minutter.
  • Leverposteiene skal ha en kjernetemperatur på ca. 75 grader.

Avkjøl og sett kaldt. Posteiene kan også fryses ned.

Server med stekt bacon og sjampinjong og godt grovbrød - gjerne rugbrød til. Ekstra godt blir det om leverposteien er lun.

Tips

Har du kjøttkvern, kan du selvsagt bruke den i stedet for kjøkkenmaskinen.
