En sjelden gang er jeg hjemme ved lunsjtider i uken. Da har jeg lyst på noe godt, men har som regel ikke tid eller ork til å lage noe komplisert. Det skal være lett, gå fort, smake deilig  og gjerne være varmt. Da er en god brødskive, eller rundstykke med bønnestuing et supert alternativ. Det tar ikke mange minuttene å lage dette, men belønningen er et par deilige smørbrød proppfulle av gode smaker.

Det skal være ansjoser i denne oppskriften, og da mener jeg ikke de tradisjonelle norske som fås i en liten boks og ligger ved siden av eggene på super’n. Nei, det må være den typen som kommer nede fra Middelhavsregionen og fås på glass. Får du ikke tak i slike, vil jeg heller anbefale å droppe ansjosene enn å bruke den krydrede norske varianten.

Jeg liker stuingen nokså grov, men liker du mer en fin pure, er det selvsagt ikke noe i veien for å mose det helt fint. Jeg bruker en sånn potetstappemoser og dytter bare litt forsiktig så ikke alle bønnene blir knust. Oppskriften nedenfor passer til en sulten person, eller to litt mindre sultne.

Ingredienser

  • 1 boks store hvite bønner
  • 3 fileter ansjos
  • 1 fedd hvitløk
  • 2 ss olivenolje
  • 1/2 dl vann
  • nykvernet pepper og evt. salt
  • Litt finhakket rosmarin eller annet grønt

Fremgangsmåte

  • Finhakk ansjos og hvitløk og varm opp oljen i en liten stekepanne.
  • La ansjosen og hvitløken surre i oljen på middels varme til ansjosen nærmest har løst seg opp.
  • Skyll bønnene godt og ha dem oppi stekepannen. Rør litt rundt og når bønnene har blitt litt varme moses de grovt.
  • Tilsett vann.
  • La blandingen putre litt til den ikke lenger er flytende. Smak til med pepper og evt. salt.
  • Rør inn litt finhakket rosmarin.
  • Ha det over på to skiver og nyt en enkel og velsmakende lunsj.
