For meg finnes det ikke noe bedre enn å sette meg ned med en bolle med varm, nærende suppe på en litt grå og sur dag. Denne fiskesuppen lagde jeg for noen dager siden da det var akkurat sånn. Tåken hang tett og det var riktig så surt ute. Med inspirasjon fra tidligere ferieturer til Thailand lagde jeg en deilig syrlig fiskesuppe til lunsj. Og der og da tikket den alle boksene mine. Den er lett og frisk, men allikevel mettende. Den er sunn (fisk og grønnsaker) og den har en smak som sender tankene mine i en helt annen retning enn gråvær og sur vind. Dessuten går det kjapt å lage den og det trengs kun en kjele.

Ingredienser

  • 1,5 l fiskebuljong/kraft
  • 3 stenger sitrongress
  • 2,5 cm ingefær
  • 2 grønne thai chili (valgfritt)
  • 2-3 lime, saften
  • 2 ss fiskesaus
  • 600 gr torsk
  • 4 pak choi
  • 1 pakke vårløk

Fremgangsmåte

  • Kok opp fiskebuljongen.
  • Rens sitrongress og knus den nedeste delen av stilken. Skjær ingefær og chili i tynne skiver.
  • Ha krydderene i buljongen og la det småkoke i 10 minutter.
  • Smak kraften til med limesaft og fiskesaus. Jeg liker en nokså syrlig suppe, men finn det du synes er en god balanse.
  • Mens buljonen koker, rens og snitt vårløk og pak choi.
  • Tilsett pak choi, vårløk og fisk og la det trekke i 4-5 minutter til fisken er ferdig.

Server rykende varm og evt. med kokt ris dersom du ønsker et mer mettende måltid.

Tips

Jeg trekker fisken i suppen. Det gjør at kraften blir litt uklar. Ønsker du en helt klar kraft, kan du trekke fisken i lettsaltet vann og så legge den i suppen når du skal servere.
