Det er ikke alltid at jubelen står i taket når jeg sier at det er fisk til middag. Men denne gangen gjorde den det. Dette er jo neste som fiskepinner, var kommentaren. Og det er det jo for så vidt. Med en tynn flyndrefilet blir jo forholdet mellom panering og fisk litt tungt på brødsiden. Men, la det bare være sagt med en eneste gang panert flyndre er kjempegodt. Og kan det i tillegg bidra til at flere spiser mer fisk så er jeg definitivt for det.

Jeg tilbragte studietiden min i Danmark, og der er rødspette veldig vanlig. Danskene spiser ofte sin panerte rødspette på rugbrød med remulade til. Når anledningen byr seg, sier jeg sjelden nei takk til et skikkelig smørrebrød med rødspette og «all the works», men hjemme er det sjelden jeg tar meg tid til å lage det. Det skal jo ikke stikkes under en stol, at det å panere fisk tar litt tid. Derfor er det gjerne til middag jeg lager dette, og på dager med litt ekstra tid.

Som sagt er det gjerne rødspette danskene bruker. Det var også planen min å bruke det. Det hadde de imidlertid ikke i fiskedisken. Derimot hadde de sandflyndre. Det er også en god fisk, og dermed ble det det i stedet. Fremgangsmåten er akkurat den samme, uansett hvilken liten flyndrefisk du velger å bruke. De filetene jeg fikk tak i var temmelig tynne, så dermed ble det også kort steketid. Er det litt tykkere fileter, må nok steketiden justeres litt opp.

Visste du forresten at i Skagen spiser de blåbærsyltetøy ved siden av flyndren sin? Det gjør de, i hvert fall i følge en av de jeg studerte sammen med som var fra Skagen.

Ingredienser

  • 500 gr sandflyndrefileter
  • 1 dl hvetemel
  • 1 ts salt
  • nykvernet pepper
  • 2 egg
  • 3 dl griljermel
  • smør/margarin til steking

Fremgangsmåte

  • Bland hvetemel, salt og pepper og legg det på en tallerken.
  • Pisk eggene sammen og ha det i en annen tallerken.
  • Hell griljermelet i en tredje tallerken.
  • Still tallerkenene ved siden av hverandre i denne rekkefølgen. Dypp fiskefiletene en etter en først i hvetemelet. Rist av overflødig mel og dypp fiskefiletene i egget og legg til slutt i griljermelet.
  • Varm rikelig smør/margarin til middels høy temperatur og stek fisken 2-3 minutter på hver side.
  • Hold fisken varm og server sammen med kokte grønnsaker, poteter og rømmedressing.

Tips

Jeg har brukt sandflyndre, men det går like fint å bruke rødspette eller en annen liten flyndrefisk. Bruk det du får tak i.
