Gnudi med spinat (som forresten uttales njudi) er små dumplings laget av ricotta og smaksatt med spinat. De ligner ganske mye på gnocchi, men her er altså potetene byttet ut med ferskosten ricotta. Det gir lettere, mer fluffy boller med deilig ostesmak. Gnudi betyr naken på italiensk, i denne sammenhengen siktes det til «nakne» ravioli. For et klassisk fyll til ravioli er jo nettopp ricotta og spinat, og her tilberedes de altså uten pasta rundt. Men altså, det viktigste er at disse små bollene er supergode, for det er neppe en tilfeldighet at ricotta og spinat har blitt en klassisk kombinasjon. Så har du lyst på en deilig klassisk italiensk rett med røttene dypt plantet i Toscana, så anbefaler jeg det å prøve deg på gnudi med spinat. Her serverer jeg dem med brunet smør og mer spinat.

Gode gnudi er lette og fluffy i konsistensen. Hemmeligheten med å få til gode gnudi er å være gjerrig med melet. Riktignok må det litt mel til for å holde dem sammen, men for mye gjør at gnudiene blir kompakte. Jeg synes det er bedre at massen er litt klissete og heller bruke mye mel når jeg ruller ut kulene, enn å få en passe fast deig å jobbe med. Vær derfor litt forsiktig, og tilsett melet litt etter litt.

Vi har nå kommet til midten av mars og min lengsel etter noe friskt å spise blir stadig større. Jeg lengter etter de første spede spirene som irrgrønne stikker opp av jorden, fulle av klorofyll og livskraft. Det er noe ganske annet enn tørre gulrøtter og poteter med begynnende groer. Inntil videre er det med drømmen, og spinat som får gjøre nytten.  Men om ikke så alt for lenge dukker de første brennesleskuddene opp, og da skal jeg lage dette på nytt med brennesle i stedet for spinat. Det blir godt det.

Ingredienser

  • 500 gr ricotta (2 pk)
  • 300 + 100 gr spinat
  • 100 gr hvetemel (gjerne tipo 00) + mer til utrulling
  • 50 gr revet parmesan
  • 1 egg, sammenpisket
  • 1/4 ts revet muskat
  • 50 gr smør
  • 1 fedd hvitløk

Fremgangsmåte

  • Kok opp vann i en stor gryte og forvell 300 gr spinat i 3o sekunder.
  • Hell av vannet og legg spinaten i kaldt vann for å stoppe kokeprosessen.
  • Hell av og klem så mye væske som mulig, finhakk og sett til side.
  • Ha ricotta, hakket spinat, parmesan, egg, muskat og 2/3 av hvetemelet i en bolle og bland godt. Hvis deigen er veldig klissete, tilsett resten av melet og samle deigen.
  • Ta deigen ut av bollen og form kuler på størrelse med store klinkekuler. Bruk godt med mel på hendene og rull kulene i hvetemel før de legges på et brett. La gjerne kulene ligge udekket på et kjølig sted i ca 1 time slik at overflaten tørker litt ut.
  • Kok opp vann i en stor kjele og tilsett 1 ss salt per liter vann. Kok gnudiene i ca. 6 minutter.
  • Mens gnudiene koker brun smøret med hvitløken i en stekepanne.
  • Når gnudiene er ferdig kokt has de over i det brunede smøret sammen med resten av spinaten. Stek til spinaten faller sammen og gnudiene er dekket med smør.

Server straks, gjerne med en frisk salat ved siden av.
