En av høstens gleder er all soppen som dukker opp. Det bugner fortsatt med sopp i skogen og butikkhyllene.  Sopp er deilig tilbehør til mange kjøttretter, men kan også godt spille hovedrollen slik som i mine kikertpannekaker med soppstuing. Kikertpannekakene har en deilig nesten nøtteaktig smak som passer ypperlig til soppstuingen. og i tillegg metter de godt.

I soppstuingen har jeg brukt forskjellige typer sopp. Denne gangen brukte jeg aromasopp, sjampinjong og litt tørket steinsopp. Men har kan nesten all slags sopp brukes, så har du vært ute på sopptur er det bare å bruke det du har. Det samme gjelder i butikken, kjøp det du liker, eller det du får tak i. Et av mine beste triks med en soppstuing som dette, er å tilsette litt knust tørket steinsopp. Det gir en fantastisk god soppsmak, og her er det sånn at litt rekker langt.

Jeg må innrømme at jeg er en elendig pannekakesteker. Jeg får liksom aldri dreisen på det. Så disse pannekakene ble (som alle jeg lager, uansett oppskrift) ganske tykke, men som middagspannekaker synes jeg det er helt greit. Men du er kanskje en bedre pannekakesteker enn meg, og får tynnere pannekaker. Slik jeg har stekt pannekakene blir det 6-8 pannekaker.

I denne oppskriften på kikertpannekaker med soppstuing har jeg også tilsatt en god mengde spinat, for jeg synes at kombinasjonen sopp og spinat er helt nydelig. Dessuten bidrar det til å gjøre denne middagen enda sunnere – og det gjør jo ingen ting så lenge smaken er god.

Ingredienser

  • 2,5 dl kikertmel
  • 3 dl vann
  • 1 ss olivenolje
  • 1/2 ts salt
  • ---
  • 1/2 kg sopp
  • smør til steking
  • 1 pakke spinat
  • 1 fedd hvitløk, finhakket
  • 1 liten løk, finhakket
  • 3 dl fløte
  • 1 ts knust steinsopp (kan sløyfes)
  • 3 kvister timian
  • 1 ts soyasaus
  • salt og pepper

Fremgangsmåte

  • Bland sammen alle ingrediensene til pannekakerøren og sett til side for å svelle.
  • Rens soppen og skjær i skiver.
  • Stek soppen til den begynner å slippe væske.
  • Ha i smør, løk og hvitløk og fres et par minutter.
  • Tilsett fløten, soyasaus, steinsoppen og timian.
  • La det kok til det tykner.
  • Smak til med salt og pepper og rør inn spinaten.
  • La det putre til spinaten har falt sammen.
  • Stek pannekakene (6-8 stk).
  • Legg litt soppstuing på hver pannekake og rull sammen.

Server gjerne med en frisk salat ved siden av.

Tips

Her kan du bruke forskjellige typer sopp. Jeg har brukt en blanding av aromasopp, sjampinjong og tørket steinsopp. Steinsoppen har jeg lagt i bløt før jeg brukte den i stuingen.
