For et par helger siden serverte jeg afternoon tea. Det er en skikkelig hyggelig måte å holde ettermiddagsselskap på. Masse deilig varm te, forskjellige typer sandwich, kaker og scones med krem og syltetøy. Dette er den tradisjonelle oppdekkingen, men man kan selvsagt servere hva man vil – bare det er skåret opp i små pene biter som er lett å spise på en dannet måte. Små finger sandwich passer perfekt. Her brukes fersk loff, friske urter og deilig pålegg – alt i moderate mengder og små biter. Dette ble opprinnelig laget som et lite mellommåltid (som har tatt litt av med årenes løp, kan man si). Men en ledesnor er fortsatt at porsjonene skal være små og inntrykket lett og delikat.

Her har jeg tre typer finger sandwich; cucumber, eggesalat og laks. Brødet skal være fint og skåret i tynne skiver. Til noen typer sandwich tilsier tradisjonen at man også kan bruke litt mørkere brød. Men igjen, bruk det du har og liker, men skjær det tynt. Det skal heller ikke være eksessivt mye pålegg, men en balanse mellom brød og pålegg.

Og så var det teen, da. For ingen afternoon tea uten te, vel. Jeg foretrekker en ren te uten melk og sukker. Det synes jeg passer best til både sandwichene og søtsakene. Men igjen, bruk det du liker, for hovedpoenget med dette «mellommåltidet» er jo at det er en sosial affære der man koser seg i selskap med andre.

Dette er et måltid som oser av britisk overklasse. Så finn frem ditt fineste porselen, sølvtøy og dekk bordet nydelig med friske blomster, duk og tøyservietter. I tillegg til sandwichen skal de være scones med syltetøy og krem samt kaker. Denne gangen serverte jeg brownies og formkake med appelsin. Makroner og forskjellige typer kjeks er også godt.

Fremgangsmåte

Cucumber sandwich

  • Skjær agurken i meget tynne skiver. Dryss over litt salt og la det ligge i 10 min.
  • Smør den ene skiven med smør.
  • Rør 1 ss Philadelphiaost med finhakket dill og persille og smør på den andre skiven.
  • Klapp agurken tørr med litt kjøkkenpapir og legg i taksteinmønster på den skiven med ost.
  • Legg skivene sammen og skjær skorpene av. Skjær deretter skiven i tre slik at det blir tynne finger sandwicher.

Eggsandwich

  • Hakk egget fint.
  • Rør majones, smør og kajennepepper godt sammen og bland inn eggehakket.
  • Smør begge skivene med smør og legg eggeblandingen på den ene skiven.
  • Topp med rikelig med karse og legg på den andre skiven med smøret inn mot midten.
  • Legg skivene sammen og skjær skorpene av. Skjær deretter skiven i tre slik at det blir tynne finger sandwicher.

Laksesandwich

  • Smør den ene skiven med mykt smør, og den andre med ost.
  • Hakk urtene og legg på osteskiven.
  • Legg laksen på den andre skiven og legg skivene sammen.
  • Skjær skorpene av sandwichen og del deretter opp i fingertykke biter.

 

Tips

Sandwichene kan godt lages litt tid i forveien, men legg dem da i kjøleskapet og dekk med plast slik at brødet ikke tørker ut.
