Jeg er ikke spesielt glad i kaker, men småkaker derimot synes jeg er mye bedre. De er små, og en munnfull eller to er akkurat passe nok med søtsaker for meg. I anledning vinterferien har jeg laget biscotti med sitron og mandler. De er akkurat passe sprø og smaker friskt av sitron.

Jeg er veldig glad i en kopp te, og med en liten småkake ved siden av blir det litt ekstra stas. I Italia er det ikke uvanlig å ta en småkake eller to sammen med et glass søt dessertvin etter et godt måltid. Det er en hyggelig skikk, og en veldig fin måte å avslutte et måltid på, synes jeg.

Ingredienser

  • 75 gr mandler
  • 100 gr romtemperert smør
  • 1,5 dl sukker
  • 2 ts vaniljesukker
  • 1 egg
  • skallet av 1 sitron fint revet
  • 1 ss sitronsaft
  • 4 dl hvetemel
  • 1 ts bakepulver

Fremgangsmåte

  • Forvarm ovnen til 200 grader.
  • Pisk smør, sukker og vaniljesukker hvitt og luftig.
  • Rør inn egget, sitronskall og 1 ss sitron. Rør til det er blandet og tilsett melet. Bland alt godt.
  • Deigen skal ikke være for tørr. Er den klissetet tilsettes litt mer hvetemel.
  • Bland til slutt inn mandlene.
  • Del deigen i tre emner og rull ut til pølser som er like lange som et stekebrett. Trykk pølsene litt flate. Sørg for at det er litt avstand mellom deigpølsene, for deigen vil flyte litt utover. Stek brødene midt i ovnen i 15 minutter.
  • Ta dem ut og skru temperaturen ned til 50 grader.
  • Mens de fortsatt er litt varme skjær brødene i skiver på skrå.
  • Legg kjeksene tilbake på stekebrettet, og la dem tørke til de har blitt sprø. Det tar en drøy halvtime.
