Denne kaken altså, den er kjemepgod. Jeg fant oppskriften i et blad mens jeg var student i Danmark for mange, mange år siden. Jeg lagde den noen ganger, men etter noen flyttinger fant jeg ikke oppskriften lenger og trodde den var tapt. Med jevne mellomrom har jeg lett etter den, og ikke funnet den. Det viste seg nemlig at jeg rett og slett lette på feil sted, for plutselig fant jeg den igjen for et par uker siden. Dermed måtte jeg jo lage denne – amerikansk ostekake med bjørnebær.

Det høres herlig ut, ikke sant? I motsetning til de vanlige ostekakene som stort sett består i å røre sammen ingredienser og vente, krever denne litt mer jobb og steking i ovnen. Det er det som gjør forskjellen for meg mellom vanlig og amerikansk ostekake, stekingen mener jeg. Det gir en helt annen smak – rikere, men også mektigere. Amerikansk ostekake med bjørnebær, er altså en deilig bakt ostekake med bær og et nydelig gelelokk av bjørnebær smakt til med Pernod. Herlig.

På toppen av kaken er det ett lag med bjørnebær og Pernodgele. Det gir en svak lakrissmak i tillegg til smaken av bjørnebærene. Siden bærlaken kokes opp, vil alkoholen fordampe, men smaken er kankje litt voksen. Det går uansett fint å droppe Pernod’en, men jeg synes jo den setter en ekstra spiss på geleen.

Ingredienser

  • 150 gr digestive
  • 50 gr smør
  • 50 gr sukker
  • 2 pk Philadelfia
  • 200 gr sukker
  • 1,5 dl seterrømme
  • 4 egg
  • 1 ts vaniljesukker
  • 400 gr bjørnebær (jeg brukte frosne)
  • 0,5 dl Pernod
  • 2 dl sukkerlake (1,5 dl vann + 0,75 dl sukker)
  • 4 plater gelatin

Fremgangsmåte

  • Knus kjeksen og rør sammen med sukker og smeltet smør.
  • Press massen ned i en kakeform (22 cm) så jevnt som mulig.
  • Stek i ovnen i 10 min på ca. 180 grader. Avkjøl.
  • Rør Philadelfiaosten og sukkeret til en glatt krem.
  • Rør inn rømmer og deretter ett om gangen.
  • Smak til med vaniljesukker.
  • Hell røren i kakeformen og sett nederst i ovnen fortsatt på 180 grader. Stek i 10 min.
  • Skru varmen ned til 120 grader og åpne ovnsdøren slik at temperaturen synker raskt.
  • Lukk igjen døren og stek i ytterligere 45-50 minutter.
  • Ta kaken ut og avkjøl helt. Gjerne over natten.
  • Kok sukkerlaken og hell over bærene sammen med Pernod. La bærene trekke i minst 4 timer.
  • Sil laken fra bærene og kok den opp.
  • Legg gelatin in kaldt vann i 10 min.
  • Pynt kaken med bærene.
  • Klem vannet ut av gelatinen og rør inn i den varme laken.
  • Avkjøl litt og hell så laken over kaken.
  • Sett kaken kjølig til geleen har stivnet helt.

Tips

Det går selvsagt fint uten Pernod også. Og andre bær enn bjørnebær kan benyttes, men husk at ikke alle bær egner seg like godt til å marineres.
