I dag har jeg lyst til å dele en oppskrift på det som for tiden er min yndlingspizza – pizza med aubergine. Dette har vært favoritten en stund nå. Men jeg har ikke fått rotet meg til å ta et bilde, selv om jeg har laget dette mange ganger. Det skyldes kanskje at jeg ikke klarer å vente med å spise til etter bildet er tatt. Rett og slett fordi det er så godt.

Denne pizzaen er rett og slett skikkelig digg,. Tomat, aubergine og ost er det jeg vil kalle en superkombo, og jeg er nok ikke den første i verdenshistorien som synes akkurat det. Tenk bare moussaka, melanzane alla parmigiana eller ratatouille, for å nevne noen innlysende eksempler på akkurat det. Ja, forresten ikke ost i ratatouillen, da. Men skikkelig gode er alle tre.

Når jeg lager denne pizzaen steker  jeg tynne skiver av auberginen i en stekepanne først og det gir den en mild, men distinkt smak og tilfører litt umami til pizzaen. Utenom å steke  aubergineskivene på forhånd er dette en litt lat pizza. I stedet for å lage pizzasaus, bare smører jeg knuste tomater rett fra boksen utover pizzaene.  Bruker du gode tomater blir det godt uten å bruke tid på å lage pizzasaus.

Så altså, neste gang du skal kose deg med å lage pizza hjemme, mener jeg at du absolutt bør lage pizza med aubergine – det kommer du ikke til å angre på!

Ingredienser

  • 5 dl hvetemel
  • 2 dl vann
  • 2 ss olivenolje
  • 25 gr gjær
  • 1/2 ts salt
  • 1 boks knuste tomater
  • 1 stor aubergine
  • olje til steking
  • 1 mozzarella
  • tørket oregano
  • Jarlsberg, revet
  • Ruccola og evt. ristede pinjekjerner til servering

Fremgangsmåte

  • Bland mel og salt og smuldre oppi gjæren.
  • Tilsett vann og olje og elt deigen godt i en kjøkkenmaskin i 15 minutter.
  • Sett deigen til side og la den heve til dobbel størrelse (ca 1 time).
  • Forvarm ovnen til max. varme. Bruk pizzasten om du har det hvis ikke, la stekebrettet stå inne i ovnen og bli skikkelig varmt.
  • Mens deigen hever; skjær auberginen i tynne skiver og stek dem i olivenolje til de blir myke og får litt farge.
  • Del deigen i 4 emner dersom du skal lage porsjonspizzaer eller lag hele til en langpannepizza.
  • Kjvle ut deigen til tynne leiver.
  • Smør knuste tomater utover leivene  og  dryss på rikelig med oregano.
  • Legg på aubergineskiver og ost.
  • Stek til pizzaene har fått sprø bunn og osten er gyllen og bobler.

Server straks med ruccola og pinjekerner. Vel bekomme.

Tips

Jeg pleier å bruke opp osterester her, så er aldri helt sikker på hvor mye ost jeg bruker utover en mozzarella.
